So, ich antworte mal mir selbst.
Ich habe dem SCS Support folgende E-Mail geschickt:
Dear Sir or Madam of SCS support,
on March 10th I changed my graphics from Radeon R9 280 to RX 480 and
also renewed the driver. I also changed my TFT from a Full HD to WQHD
display as well.
After that I could configure the resolution without any problems.
Now I wanted to start ETS 2 today and change the resolution, like I did
it for ATS which I got new on steam a few weeks ago.
When I've tried to change the resolution or any other graphics
configuration, like MSAA on/off, the game suddenly produces a Windows
Appcrash when beeing applied. The monitor switches out off the game and
tries to get back into...then the appcrash notification appears with no
further information.
I thought about, if the latest update for ETS 2 and ATS could produce an
issue like that on both (because it's globally patched)?! Furthermore I
changed my hardware almost 2 weeks before the new version was realeased
on steam.
I attach my game.log.txt of both games for you.

Hi
We found a issue which happens when you try to change some
graphics settings while not having a assigned truck. We will fix it in a
minor update soon. Until then you can work around this issue by only
changing the graphics settings while having a truck (e.g. when driving a
quick job).

Ich konnte das Problem gestern selbst noch lösen, indem ich die gesamte Spiele-Config unter "C:\Users\Username\Documents\Euro Truck Simulator 2" bzw. "C:\Users\Username\Documents\American Truck Simulator"einfach gelöscht habe und vorab natürlich die gepeicherten Spiele aus dem Profil gesichert und wieder zurück gespielt habe, nachdem ich das jeweilige Spiel ohne Config sozusagen als frisch installiert gestartet habe. Dort konnte man die Grafikeinstellungen auch wieder vornehmen.
Ich hoffe, hiermit kann ich noch anderen Leuten helfen?! Wenn man die Auflösung konfiguriert hat und keinen neuen Monitor anschafft, tritt das Problem ja auch gar nicht auf.
